材料:
200克中蝦
3顆蘑菇(切小塊)
少許紅蘿卜(切小塊)
香蔥(切碎)
油麥菜
1湯匙蠔油
1湯匙豆豉
蒜末和洋蔥末
姜絲
調味料:鹽,生抽,料酒,麻油,胡椒粉,生粉
Ingredients:
200g shrimps
3 mushroom(diced)
carrot(diced)
spring onion(chopped)
1 bowl lettuce
1 tablespoon oyster sauce
1 tablespoon black bean paste
minced garlic & shallot
sliced ginger
seasoning for wanton paste: salt, soy sauce,
shao xin wine, sesame oil, pepper and cornstarch
把蝦清理干淨,切成小粒狀
將蝦,紅蘿卜,蘑菇和香蔥放入碗里
加入調味料拌勻,蓋上保鮮膜腌制30分鐘
包云吞:按自己喜歡的方法來包
煮云吞: 將云吞放入沸水中,煮至云吞浮起熟透時撈出瀝干;
將煮好的云吞放入搽了油的碗
焯燙麥菜:將麥菜放入沸水中,加少許鹽,焯燙几秒鐘;
將焯燙好的麥菜拌在煮好的云吞,
clean and dry the shrimps, chopped
add all seasoning into shrimp, carrot, mushroom and mix well
marinate for about 30 minutes
wrap wanton with marinated shrimps paste
cook wanton in boiling water
drain and set aside
cook the lettuce in boiling water and add some salt
just cook the lettuce for few seconds
place the cooked wanton together with the lettuce
熱油鍋,下豆豉慢慢炒出香味,
加入姜絲,蒜末和洋蔥末再炒香
然后倒入蠔油,加入清水、白糖,中火煮開;
將蠔油醬汁淋在焯燙好的麥菜云吞上
heat oil in wok, add in sliced ginger, minced garlic & shallot
fry for about 1 minute
add in black bean paste and stir fry for another 2 minutes
add in oyster sauce, add in some water
simmer and pour onto the lettuce and wanton
